How to use a cafetiere
1. Remove the lid and fill the jug with boiling water. This will pre-heat it and prevent your coffee cooling too much as it brews.
2. If using your own beans, grind them to a medium coarse consistency. Pre-ground beans are fine too, but nothing can beat the freshness of just-ground coffee. You'll want to end up with about 70g of grounds per litre of coffee. So, for a 3 cup cafetiere (350ml), you'll need about 23g of grounds.
3. Empty the hot water from the jug and add your coffee grounds.
4. Slowly fill the jug about 1/3 of the way up with hot - but not boiling - water. For the best results you'll want your water to sit at around 91-96°C. Once you've added the water, stir and allow to sit for 30 seconds. This will allow the rich notes in the coffee to develop.
5. After 30 seconds, fill the jug to the top with the rest of the water. Stir, replace the lid, ensuring the plunger is pulled all the way up, and allow to brew for a further 3 minutes 30 seconds.
6. Once brewed, slowly push the plunger down, taking care not to push too hard at the bottom, as this can compact your grounds and release a strong, bitter taste.
7. Pour and serve.
